An easy and delicious recipe for Easter Monday lunch is quiche with rocket sauce. The fragrant shortcrust pastry enhances the intense flavor of the rocket and makes it a light dish but at the same time rich in taste!
Try this quiche also with Nettle Sauce or Radicchio Sauce Cascina San Cassiano.
Ingredients
For the shortcrust pastry:
- 200 g of flour 00
- 100 g of butter (cold)
- 70 ml of cold water
For the stuffing:
- 70 g of liquid cream
- Rucola Sauce Cascina San Cassiano
- salt and pepper to taste
- the grated zest of 1 lemon
- 30 g of dried tomatoes
Preparation
Cut the cold butter into small pieces and mix it with the flour in a bowl until you get a sandy mixture, then add salt and cold water. Knead strongly until you have a homogeneous mixture. Wrap everything in cling film and place in the fridge for about 40 minutes. After the necessary time, grease a mold for tarts with a diameter of 24 cm and roll out the dough to a thickness of about 2 mm. Then proceed with the preparation of the filling: pour the rocket sauce, the liquid cream, salt and pepper, the lemon zest and the dried tomatoes previously chopped with the mixer into a bowl. Mix all the ingredients well and then pour the mixture over the dough. Bake at 200 ° C for 25 minutes in a preheated static oven.
