Protein mousse with “Difrutta” spread

Sweet and protein is only an apparent contradiction, as evidenced by this recipe particularly suitable as breakfast maybe after a little jogging or before going to school or work. This mousse is perfect for a sweet interlude to recover energy without compromising the diet. It can be prepared in advance and stored in the fridge.

Put 250 ml of water in a small saucepan and bring it to a boil and lightly scald the egg whites while mixing. Continue to emulsify the egg whites until we have reached a creamy consistency, then add a few drops of liquid sweetener and flavor with cinnamon or vanilla. Place in the refrigerator for 1 hour, then put in the blender with the contents of 1 jar of Cascina San Cassiano’s “Difrutta”- High in protein orange spread and emulsify.

Portion the mousse into small cups and refrigerate for at least 2 hours. At the time of consumption add the dried fruit and sprinkle with bitter cocoa.
