Pan-fried cod fillet with lemon marmelade is a light and tasty dish, to be savored during a summer lunch, perhaps on the terrace! The delicate aroma of lemon enhances the flavor of the fish giving it a particular freshness. Ideal accompanied by sautéed vegetables.
Ingredients
- 4 cod fillets
- 80 g of clarified butter
- salt and pepper to taste
- 10 g of parsley
- 30 g of pine nuts
- 50 g of flour 0
- 150 ml of water
- Lemon Marmelade Cascina San Cassiano
Preparation
Toast the pine nuts in a pan for about 2 minutes until a homogeneous browning is obtained. Finely chop the parsley. Place the butter in a pan and let it melt on a low heat. In the meantime, add salt, pepper and flour to a bowl and flour the cod fillets. Arrange the fillets in the pan and increase the intensity of the flame. Once cooked, place the fillets on a hot plate and pour the water, the chopped parsley and the pine nuts into the thick cooking pan of the fish to obtain a sauce, making the mixture thicken. Serve the dish accompanying the fish with its sauce and a spoonful of lemon marmelade.
