The sauce is ready to pour directly over freshly drained pasta. It can be heated over low heat or in the microwave, after opening the jar and removing the capsule. We recommend finishing cooking the pasta by sautéing it in the pan with the sauce for a minute. It is fantastic for seasoning spaghetti or bucatini.
Typical sauce of Roman trattorias, prepared with tomato sauce, pecorino cheese and pork cheek. Initially it was a white sauce, prepared by the shepherds of Amatrice who brought with them pieces of pork cheek, pecorino cheese, lard, black pepper and dried pasta, only at the end of the 1600s was added to this white sauce the tomatoes.
