Curiosity

The history of mayonnaise dates back to 1756 when Cardinal Richelieu’s nephew, the Duke of Richelieu, took up residence on the island of Menorca, ousting English rule. To celebrate this victory, he offered a lavish banquet for his troops, and the chef, for the occasion, wanted to prepare a first egg-based sauce. This first sauce did not turn out as well as the chef had hoped, so he opted to make the mixture of eggs and oil that he had seen the inhabitants of the island of Menorca prepare. In the vegan version, we prepare this sauce without the use of eggs.
