Curiosity


Hollandaise sauce is one of the five “great mother sauces” of French cuisine. Despite its name classic hollandaise sauce but was developed in France in the 18th century by François Louis Caibaud, chef to the Prince of Condé. According to legend, the sauce was created by the French cook during the War of the Austrian Succession in 1740-1748 when the Prince of Condé, who was allied with the Dutch, needed a sauce to accompany his fish dishes.
