How to use


The sauce is ready to pour directly over freshly drained pasta. You can reheat the sauce over low flame or in the microwave, after opening the jar and removing the capsule. We recommend finishing cooking the pasta by sautéing it in the pan together with the sauce for one minute. Try it also on bread or as a sauce for stews, great for topping vegetables pies, timbales and lasagna.

Smoked provola is a typical product of Campania and shares with mozzarella its ancient origins and a similar but much longer process. Both cheeses have since spread throughout Italy because they are widely used in cooking. Smoked provola is also a substantial stringy cheese. At the end of processing, the cheese is placed in a closed environment in contact for a few minutes with the smoke produced by burning damp straw, thus acquiring the typical color and flavor of smoke. Smoking is a food preservation system: perhaps this is the reason why already in the traditional Neapolitan cribs of the 1700s provola fumé is often reproduced.
