The sauce is ready to pour directly over freshly drained pasta. For a better result, we recommend warming the sauce over low heat or in the microwave, after opening the jar, or sautéing the pasta together the sauce in a pan. Also try it on potatoes and seafood fish salads.
Anchovies dripping is a very ancient and prized sauce that has its origins in the Campania region of Italy. Its exact origin is not known with complete certainty, but the production technique is thought to have been developed by the ancient Romans. Anchovies dripping is produced using freshly caught anchovies, which are salted and pressed so that the liquid comes out. This liquid, which is highly concentrated and rich in flavor, is then slowly strained through a net of woven rods so as to separate the finer, aromatic part of the liquid from the thicker, more salty part. The process of producing anchovies dripping is very labor-intensive and requires a great deal of experience and skill. Traditionally, production takes place during the summer period, when anchovies are most abundant and fresh. Today, anchovies dripping is still produced artisanally by a few producers in Campania, particularly in Cetara, on the Amalfi coast, and is considered a true culinary treasure.
