Mayonnaise history remounts to 1756, when in Minorca Island the nephew of Cardinal Richelieu, the Duke of Richelieu, won the island to the Englishmen. To celebrate this victory he held a feast for his troops, and the chef tried to prepare an eggbased sauce, but its poor results forced him to imitate the local mix of oil and eggs. Our mayonnaise is prepared with italian eggs from hens elevated free from cages.
