Open the jar and reheat the ragù over low flame or in the microwave oven in order to enhance the quality of ingredients and appreciate the balance of flavors that make this ragout soft and pleasing to the palate, suitable to season filled pasta or to prepare more complex recipes such as lasagna, flans and timbales. The ragout at room temperature is great also poured directly on freshly drained pasta and completed with grated Parmesan cheese. Taste it also on polenta or to season gnocchi.
The term “Fassona” is used to identify the “beef of the Piedmontese breed” and it seems that this denomination was consolidated on the boar markets of Piedmont when French breeders used to refer to the best calves on sale as “de bonne façon” (of good workmanship), whose phonetics suggested the dialectal expression “fasson”. Even today talking about “Fassona meat” is synonymous of high quality meat. It is a meat with a lean mass compared to other breeds of cattle, so as to be considered the meat of athletes for its low content of saturated fats and high concentration of antioxidants: from a nutritional point of view this meat is similar to blue fish.
