“Speedy” tart with plum jam

The “speedy” tart with plum jam is an excellent recharge of taste and energy for those who have the most difficulty starting the day in the morning. Easy and good to prepare, it satisfies everyone’s tastes, from the oldest to the youngest.
It can also be enjoyed with different variations such as with the Strawberry Extra Preserve with Stevia Cascina San Cassiano or with Organic Blueberry Extra Preserve Cascina San Cassiano.
Ingredients
- 2 eggs
- 100 g of butter
- 100 g of sugar
- a pinch of salt
- 300 g of flour 00
- grated lemon rind
- 2 teaspoons of baking powder
- Plum Extra Preserve Cascina San Cassiano
Preparation
Sprinkle with flour a pastry board. In the center mix together the cold butter, sugar, eggs, a pinch of salt and 2 teaspoons of baking powder. Stir quickly until the dough has a compact consistency. Grease and flour the tray of the microwave or alternatively a normal baking tray, an ideal solution because heat is transmitted by conduction very well and this avoids the burning of the tart base. Spread ¾ of the dough, riddle with holes the surface using a fork and lay a layer of jam. With the dough left make rolls and place them on the tart creating a sort of a grate. Bake in the microwave for 12 minutes (“crisp” function) or in the oven at 180 °C for half an hour. Finally sprinkle with icing sugar.
