Ingredients

- 4 egg yolks
- 200 g of flour 0
- 1 tablespoon of poppy seeds
- 70 g of boiled spinach juice
- 4 tablespoons of Genovese Pesto Sauce without Garlic Cascina San Cassiano
- Alternatively for the protein version High in protein basil pesto sauce or High in protein red pesto sauce
Preparation
Steam about ½ of spinach so as to obtain the juice from them and consequently the chlorophyll which will serve to color and give flavor to the homemade pasta. Knead and roll the dough, possibly in the form of “spaghetti alla chitarra”, in order to then make the nests that will be immersed in boiling oil for about a minute. Once fried place the nests on absorbent paper so as to make them dry. Separate the albumen from the yolk and pour the latter in water at 90 °C for about 45 seconds, so that it solidifies only on the surface. With extreme delicacy, remove the egg white from the water, roll it on some poppy seeds, and finally place it in the center of the nest. Complete the dish sprinkled with drops of Basil Pesto without Garlic Cascina San Cassiano.
This recipe can be interpreted in the protein version using High in protein basil pesto sauce or High in protein red pesto sauce.
