A very simple and delicious recipe for when you don’t have time to cook is seared beef with mixed vegetables. This dish preserves all the flavor of the meat and at the same time enhances the freshness of the mixed vegetable “giardiniera”, for a light and tasty appetizer or second course!

Start by cutting the beef tenderloin in half lengthwise, then divide the two parts again, cutting them in half lengthwise. Brown the 4 parts of fillet obtained in a pan with a drizzle of oil. Cook the meat for about 3 – 4 minutes on each side, so that it is browned on the outside but pink on the inside. Once the fillet is ready, cut into cubes and let it rest for a couple of minutes. In the meantime, arrange the mix of sweet and sour vegetables on the plate, then place the meat on it and garnish with some more vegetables. Add salt and pepper to taste before serving.
