Cherry muffins are sweets that everyone likes. Crunchy and juicy, everyone likes them. They are the right charge for the morning and an excellent excuse for a break.
Ingredients
- 2 eggs
- 50 g of butter
- powdered sugar
- 110 g of 00 flour
- almond grains
- 50 g of brown sugar
- a pack of biscuits
- 80 g of refined sugar
- 2 tablespoons of cherry juice
- ¼ baking powder dough
- 20 Pitted Cherries in Syrup Cascina San Cassiano
Preparation
Mix the two types of sugar together and add the softened butter. Beat the butter and sugar until a frothy cream is obtained. Add the slightly beaten egg yolks. Continue to mix with the whisk and add the sifted flour and baking powder. Add the cherry juice and, gently, the egg whites until stiff. Grease and flour muffin molds, add a spoonful of dough, the pitted cherry syrup and another spoonful of dough. Finally, before baking at 180 °C, sprinkle the cherry muffins with the almond grains and the crumbled biscuits. In this way, when cooked, you will get muffins with crispy cherries outside and soft inside.
