Delicate and refined cocoa cream enriched with whole pitted candied black cherries. Savored alone it is an excellent as spoon dessert, it can also be used to garnish cakes, ice cream, yogurt and fruit salad.
A cream-dessert ideal as an end-of-meal dessert and as an interlude along the day, it can be used as a filling for croissants, for sweet crêpes or to garnish cakes, perfect on ice cream, on fruit salad and with yogurt; it is really great when used to accompany Panettone, Pandoro and Easter doves.
The black cherries are not born from a cherry tree but they are the fruits of sour cherry, a plant of Middle Eastern origin. It seems it was the Roman general Lucullus to import the sour cherry in Italy in order to plant it in the garden: in ancient times its fruits, sour cherries, were used to cook a delicious soup. Black cherry is visually different from cherries because it is smaller, of a less intense red color which darkens with the advanced ripeness; the taste is bitter and sour and for this reason it is used in cooking to balance the very sweet notes. Both pits and pulp of black cherries are used in cosmetics for their toning properties.
